The Demerara distillery also boasts the ability to produce nine completely different types (marks) of rum on the very versatile Savalle stills, a feat which no other distillery can boast. The rums coming off of these stills vary from the very light through to the heavy bodied flavoured rums. Coupled with the company's expertise in blending, the company can produce any type of rum, mixing and blending together any of the nine different marks.

The spirit having come off of the still, is "broken down" to the desired strength and is put aside for ageing. Ageing is done in 45 gallon, oak, once used whiskey barrels, which are stored in the company's warehouse. The warehouse has a racking capacity of 50,000 barrels. Today, the warehouse hold barrels with rums as old as 25 years.

Having been taken out of the barrels, these rums are blended to perfection by our master blenders and allowed to mix intimately until the desired aroma and taste are achieved. The rums are then reduced to bottle strength and bottled.
