The continuous still used here is a wooden still that is the only one of its kind still in operation in the world today. Rum experts attribute the uniqueness of the Demerara light rums to this still. One rum expert in describing the Demerara rums, attributes the quality to, and in the Guyana Review he said "… part of the distinctiveness of the Demerara rums produced by Demerara Distillers Limited, perhaps, comes from the wooden still - the only one of its kind in the world. It produces a distinctive spirit, not quite like either light or heavy rum…"

The pot still on the other hand, produces the very heavy bodied, very flavourful, very aromatic rums. The production of these rums unlike that of the continuous still rums, is done in batches. A quantity of fermented molasses (wash) is put into the pot and boiled. The vapours that are released as a result of this boiling are trapped in the condensers and condensed to rum. After all of the wash has been distilled, the pot is emptied and the process is started again. Here, a wooden pot still is used, and again, this is the only one of its kind still in operation in the world today. The wood of the still lends additional flavour to the rums.
