The fermentation process takes approximately 22-24 hours to be completed. The rum from the fermented molasses also referred to as wash, is usually at strength of 6% alcohol by volume and is extracted by the distillation process, through the stills.

There are two types of stills at the distillery - the continuous and the pot stills. In the continuous still (Coffey), the fermented molasses (wash) is added into the top of the column, while steam is injected at the very bottom. This process of adding the steam and the wash simultaneously to the still, allows the alcohol vapours to rise to the top of the column into the condensers which then condense the vapours to liquid (rum). The versatility of the continuous stills allows these to produce in excess of nine different marks of rum and alcohol, with varying degrees of congeners. These congeners determine whether the resultant rum will be heavy or light bodied.
